Yes. Curing is a time-dependent process in which raw ingredients, typically meats, undergo chemical and physical changes to develop flavor, texture, and preservation qualities. During curing, conversion occurs through enzymatic activity and beneficial bacterial cultures, which accelerate the breakdown of proteins and fats. This process often takes place during exposure to air (air drying), allowing the product to mature naturally over time.
This process takes longer in yards that are made of rocks, turf, or dirt.
